Chocolate-Chip Banana Bread Bites (Vegan & GF)

Looking for something that’ll satisfy your sweet tooth but not totally throw you off your healthy eating routine? These Chocolate-Chip Banana Bread Bites are the best snack! The bites are super dense and melt-in-your-mouth delicious, I just can’t stop snacking on them! I think one batch survived maybe 2 or 3 days. I wanted to create something using only natural, plant-based ingredients that would satisfy my sweet tooth and the taste buds of others. I think you guys will really like these little bites – you would never know they aren’t made with refined sugars, flours or dairy! In this recipe, I use a sugar called coconut sugar, or as some call it, palm sugar. Coconut sugar is basically the boiled and then dehydrated sugar from a coconut palm. I use coconut sugar because it contains trace minerals such as vitamin B & C, potassium, calcium, zinc and iron. Coconut sugar won’t spike your blood sugar like regular white sugar does, which is also a great thing! Coconut sugar is a sustainably-grown sweetener (palm trees don’t require much watering) and I use organic for best quality. The rest of the ingredients you will probably find in your pantry!

Ingredients
  1. 1.5 cups of oats
  2. 4 ripe bananas (spotty)
  3. 4 tbsp of coconut oil
  4. 1/2 cup of coconut sugar
  5. 1 tsp vanilla extract
  6. Pinch of cinnamon & salt
  7. 1 heaping tsp of baking powder
  8. 1 small handful of dairy-free dark chocolate chips
Instructions
  1. Preheat oven to 375 F.
  2. In a food processor, add the oats and blend until they are ground down to a flour.
  3. In a blender or food processor, blend all of the ingredients. Transfer to a lined baking loaf pan.
  4. Bake for about 45 minutes and remove from oven to cool.
  5. Once cooled, cut the loaf into small squares. Store in a tupperware in the fridge!
