Chocolate Chip Zucchini Bread

This Chocolate Chip Zucchini Bread is the perfect mid-morning snack! All of the ingredients are super nutritious and totally affordable, too! I like to use oat flour as a base of most of my baking because it’s so easy to find and keep on hand, all you need are some oats and some sort of blender or food processor to make it! I also think oats are very underrated – we often forget how much goodness is in them, like protein, iron and dietary fiber. This recipe also calls for flax seeds, which are another thing that are a staple in my kitchen, they are also very affordable if you buy them in good quantities and are a great addition to any dish or baked good, like this loaf, and can be a substitute for eggs in vegan baking. I absolutely love love love zucchini in baking and I think you will too! It makes the bread moist and fluffy without weighing it down and it adds a delicious nuttiness to the whole thing. Tip: it’s best enjoyed straight from the oven!

Ingredients
  1. 4 tbsp flaxseed meal
  2. 4 tbsp water
  3. 1 cup grated zucchini
  4. 1/2 cup of unsweetened apple sauce
  5. 4 tbsp melted coconut oil
  6. 4 tbsp agave syrup
  7. 1.5 cups of oats
  8. 1/2 cup rice flour
  9. 1/2 tsp cinnamon
  10. 1/4 tsp cardamom
  11. dash of salt
  12. about 1/4 cup of crushed walnuts, plus more for decoration
  13. about 1/4 cup of chopped dairy-free dark chocolate or chocolate chips
Instructions
  1. In a small bowl, combine the flax meal and the water. If you only have whole flax seeds, simple grind these in a small blender or food processor until they are broken down into a meal. Set aside while you make the batter.
  2. Add the grated zucchini, apple sauce, coconut oil and agave syrup to a large bowl and mix well.
  3. In a food processor or blender, add your oats and blend until they become a flour-like consistency. This step is super simple and should only take 1 minute. Transfer to a bowl and add the rice flour, cinnamon, cardamom and salt.
  4. Combine wet and dry ingredients and mix well. Fold in the crushed walnuts and chopped dark chocolate. Pour the mixture in a baking bread loaf or pan, whichever you prefer, and sprinkle with more crushed walnuts and chocolate chunks.
  5. Bake at 350 degrees for about 50 minutes. Do the toothpick test and then remove from the oven and let cool.
Notes
  1. These are best enjoyed warm straight from the oven or heated up again. They also taste amazing with some banana or coconut ice cream!
