Savoury Vegan French Toast

This is one of the best breakfasts I’ve had in a while. Sometimes I have the biggest craving for a savoury breakfast, so I usually opt for avocado toast with course sea salt, cracked black pepper and tomato slices on rye bread, but this…this is BETTER than avocado toast. I recommend getting a good quality bread to make this recipe extra special. I used a classic Italian ciabatta loaf for this one, but I’ve also used gluten-free buckwheat ciabatta before and I’m sure you could try it with other fluffy breads like Udi’s (note: Udi’s is not vegan, it contains eggs). For the vegan pesto, I like using this recipe. This recipe works so well because the pesto, tomato and toasted bread just pair so perfectly together. The avocado is the best touch and I love using lots of spices and herbs to freshen it up!

Ingredients
  1. 2 tbsp of ground chia seeds
  2. 4 tbsp of water
  3. 1 cup of rice milk (almond milk should work fine too)
  4. 1 pinch of cayenne pepper, paprika and turmeric
  5. 6-8 pieces of thick ciabatta bread
  6. 4 tbsp of vegan pesto
  7. 1 tbsp water or lemon juice
  8. 1 tomato, sliced
  9. 1 avocado, sliced
  10. 1 handful of mixed organic greens
  11. Optional toppings: sundried tomatoes, red pepper, capers, olives, etc.
Instructions
  1. In a shallow bowl, whisk together the first 4 ingredients until evenly combined.
  2. In a small separate bowl, mix the pesto and the water or lemon juice until it forms a "paste", this will taste really delicious on the french toast.
  3. In a heated pan or skillet, add 1 tsp of olive or avocado oil. Take 1 slice of bread and dip both sides in the rice milk mixture. Place the bread slice on the pan and let sit for about 3 minutes on each side, until golden brown. Be patient but make sure to not let them burn. Do this to each slice of bread.
  4. Next, layer the bread slices with pesto, tomato slices and greens (and any other desired toppings). Enjoy warm or cold (makes for delicious leftovers as well).
