Spiced Yellow Lentil Dal

Curry is so comforting, it’s one of my favourite dinners – I make it at least once a week! One of my favourites is with yellow lentils. I love to make purreed soups with red or green lentils, but keeping the yellow lentils whole is a great way to make a heartier meal! I think you will love this recipe. It’s so simple to make and has such unique flavours. I do use a lot of spices, but all of them are really easy to find and last forever! I highly recommend serving the curry with some crushed tomatoes and squeezing a bit of lime over everything at the end, it is the perfect touch. Your kitchen will smell lovely after you make this!

Ingredients
  1. 2 tbsp coconut oil
  2. 1 small yellow onion
  3. 1 garlic clove
  4. 1 large cup of yellow lentils (about 200g)
  5. 1 and 1/2 cups of water
  6. 1 medium sweet potato, cut into small chunks
  7. 1/4 of a zucchini, cut into small chunks
  8. 2 medium sized ripe tomatoes, chopped
  9. 1/2 cup coconut milk
  10. 1 tsp turmeric
  11. 1 tsp curry powder
  12. pinch of saffran, cumin, chili flakes, cinnamon, salt, pepper and paprika
  13. Cilantro or parsley, to garnish
  14. Canned crushed tomatoes, to serve
  15. Lime, juiced to serve
Instructions
  1. In a medium-sized pot on the stove at medium heat, finely chop the onion and the garlic and lightly fry them in coconut oil.
  2. After about 2-3 minutes, once the onions are transparent, add the lentils and stir quickly with a wooden spoon so the flavours mix well together for about 1 minute. Feel free to add some of the spices here, too.
  3. Next add the water and stir well. Bring to a boil and then reduce to a simmer.
  4. Add the sweet potato and zucchini and let this simmer for about 5 minutes.
  5. Add the tomatoes, coconut milk and all of the spices. Stir well and then let simmer for about 15-20 minutes or so, or until everything is well cooked and smells nice!
  6. Serve with crushed tomatoes, lime juice and garnish with herbs.
